1. Thanksgiving Sausage Stuffing
Ingredients:
-1 pound pork sausage
-6 celery stalks, chopped
-2 onions, chopped
-1/2 cup butter
-6 cups cubed Italian or white bread
-1 cup seasoned bread crumbs
-1 teaspoon fresh sage, chopped
-1 teaspoon fresh oregano, chopped
-2 teaspoons fresh parsley, chopped
-1 clove garlic, minced
-1/2 teaspoon fresh ground pepper
-1/2 teaspoon salt
-3 cups chicken stock
Preheat the oven to 350 degrees and then cook the sausage over medium heat until it is evenly browned. Drain it, and then melt butter in a large sautÃ.é pan. Cook the celery and onions in the pan. In a mixing bowl, add the celery and onion mixture, sausage, bread cubes, bread crumbs, garlic, parsley, oregano, sage, salt and pepper. Next, stir in the chicken stock. Bake for 45 minutes in a large glass bake pan or deep-dish oven pan until the top is brown. This makes 10 servings.
2. Cheese Grits with Ham
Ingredients:
-3 cups water
-1/2 teaspoon salt
-3/4 cup quick-cooking grits
-1/2 cup shredded mozzarella cheese
-1/2 cup finely diced ham
-2 tablespoons finely chopped green onion
-2 eggs, separated
-dash of Tabasco sauce
Directions:
Butter a deep 1 1/2-quart casserole dish and preheat the oven to 375 degrees. In a medium saucepan, boil the water, and then stir in the grits. Cook for about 5 minutes, or until thick, stirring frequently. Then, stir in the cheese, ham, green onion, egg yolks and Tabasco sauce. In a bowl, beat egg whites until stiff peaks form. Fold it into the grits mixture and pour the mixture into the prepared casserole. Bake for about 30 minutes, or until puffed up and golden brown. Serve immediately for four people.
